Celler Pasanau is located in La Morera de Montsant, the northernmost and highest municipality in the D.O.Q. Priorat.

Our great-grandparents started cultivating the vineyards many years ago. Generation after generation, we have continued to craft our wine until 1995, when the current company, Celler Pasanau, was founded by the brothers Joan, Albert, and Ricard Pasanau.

We produce wines with a distinct personality that reflect the characteristics of each estate. The high-altitude geographical location, bioclimatic conditions, grape varieties used (cabernet sauvignon, viognier, in addition to traditional varieties), give our wines unique qualities compared to other areas in Priorat.

In 2012, the winery began the process of obtaining Organic certification, a process that was completed three years later without making significant changes in both wines and winemaking methods, as our philosophy has always been to produce wines in a traditional manner.

The soils on which our vineyards are planted vary greatly: from the slate soils known as Llicorella to the limestone gravels at the foot of the Montsant mountain range.

The microclimate also varies according to altitude and orientation: from the sunny vineyards in the valley around 400m to the airy and cool ones near the mountain above 700m in height.

It is a rule of the winery to leave the vineyards at the mercy of the weather, avoiding the use of additional irrigation.

Once the grapes are selected, they enter the winery for processing. The system used is based on traditional methods of the region.

The different grape varieties and vineyards are processed and aged separately until the moment of deciding the proportions that will make up the different wines.

After a period of harmonization, the wines are bottled without using clarifying filters to preserve all their properties.
